I could not let the first Monday of 2016 fly by without sharing a blog post about these Winter Salads. I’ve missed you!
David, HRH and I rung in the new year by ordering pizza and spending a nice quiet evening at home. How did you ring in the new year? Did you make any resolutions for the new year?
Perhaps you resolved to improve your health in 2016? If so, we invite you to start the new year on the right foot, by participating in Meatless Monday. If you are interested in getting healthy, saving money, or trying to save the planet, participating in Meatless Monday as part of your weekly routine is a great way to start the new year.
David and I have been meatless on Monday for 3 years this month! It is a normal routine for us and I enjoy the challenge of coming up with new meatless recipes to try. If you are willing to take the Meatless Monday challenge here are 3 Winter Salads to get you started:
3 MUST TRY Winter Salads:
This Asian Salad with Sesame Dressing is sweet, savory, and slightly tangy, and has a definite sesame flavor that makes this dressing so good!
#2) Carrot Salad:
This healthy carrot salad is served on top of a bed of spinach with juicy raisins, candied walnuts, and a lemony homemade dressing.
#3) Roasted Beet Salad:
Roasted beets sliced and tossed with crisp fresh spinach, tangy feta cheese, thinly sliced red onion and candied walnuts, then drizzled with a balsamic maple cinnamon dressing.
