What can I say, we love us some seafood!! We started our “Staycation” a couple of weeks ago by indulging in some of our favorites. We went to Wegmans and bought the freshest wild-caught seafood they had on display.
David is always anxious to light the grill, especially now that we have moved it back to our deck.
While the shrimp and corn on the cob were getting ready to go into the boil, David put on a few Rock Fish fillets and the asparagus I had prepped. Believe it or not, we had never grilled asparagus at home over the open coals. I don’t know why, because they were so yummy!
He basted the fish with a special sauce he uses when grilling fish. He made this up for me back in the day and really impressed me with it. I grew up on fried fish and had never eaten grilled fish much. When I asked David what he called the sauce, he said he didn’t know. He had stolen the recipe from an old fishing buddy of his. So I decided I would name it: “Al’s Stolen Fish Sauce“. Named after the fishing buddy he stole it from.
Even though we had a bottle of cocktail sauce in the refrigerator, we decided to make some from scratch. If you have never had fresh cocktail sauce before, you are missing out! It is so much better fresh!!
Yep, it was as good as it looks. Rock Fish is truly a swimming steak! Have you ever heard the expression “We were eating, high on the hog”? Well, that night we were eating “High on the mountain”. Well, not really only 1000′ up.
