I’m back from my blogging break and I am anxious to share this Sheet Pan Cajun Dinner recipe with you!!
While I was away, I was busy taking care of some things I let go around the house, for too long. I didn’t have a lot of time to spend in the kitchen. I welcomed any kind of meal that was quick and easy to make; the kinds of meals that don’t take a lot of time in the kitchen or make a lot of mess to clean up either. Poor David, I think he was a little lost without me planning our meals. I wish you could have seen him…lol!
Quick and easy meals are those like “one-pot-wonders”, but what if I told you that you can just throw a bunch of ingredients around on a sheet pan and call it dinner?
I know, it sounds too good to be true, right?
I thought so too, until I tried this sheet pan meal out for myself. It worked!!
Believe everything you read and hear about sheet pan dinners. They are really are easy to make and I cannot believe I haven’t tried any of these meals before this sheet pan Cajun dinner.
I’ve seen lots of recipes for “sheet pan dinners”. The idea being that these dinners are made literally, by tossing all the ingredients into a single sheet pan and popping it into the oven. Everything on the sheet pan roasts on one pan in the oven with the same time and temperature, but I realize that the key to these dinners is that everything needs to be about the same size so that everything cooks evenly and is done at the same time.
Not only do I love this sheet pan dinner because it is so quick and easy to make, it also reminds me of Christmas time! Yes, you read that right… On Christmas day David and I go spend time with his family and his sisters and niece make a huge low country boil for everyone. It’s so delicious! I love that country boil almost as much as the great memories we’ve been making every year.
This Sheet Pan Cajun Dinner is the perfect example of how quick and easy should be, with very little cleanup. Simply talking about it makes my mouth water! Cajun spiced shrimp, juicy andouille sausage, asparagus, potatoes, and corn make up a delicious flavorful meal in minutes.
Here’s how I made this quick and easy Sheet Pan Cajun Dinner:
Preheat the oven to 400 degrees F and line a large sheet pan with aluminum foil.
Heat the oil and melt the butter in a small sauté pan, over low heat. Saute the sauté, stirring constantly, until garlic foams 3 to 5 minutes.
Turn off heat; add the Cajun seasoning and the juice of half the lemon. Stir well and allow to cool.
While the Cajun spice mixture is cooling, you can prep the shrimp, sausage, and vegetables.
Place the prepared vegetables, shrimp and sausage on the prepared sheet pan. Toss with the cooled Cajun spice mixture gently to combine, ensuring everything is coated.
A small box of rubber gloves in the kitchen is one of the greatest tools in the kitchen. I used rubber gloves to toss this dinner on the pan. It made this task really simple and neat. I love having rubber gloves around. Buy some HERE!
Place the sheet pan of Cajun goodness into the oven and bake for 30 to 40 minutes, or until the shrimp are opaque and potatoes and corn are tender.
Garnish with parsley and serve immediately with lemon wedges, if desired.
Not only is this Sheet Pan Cajun Dinner a great weeknight meal during a busy week, but this Cajun dinner would be perfect for entertaining friends when you don’t want to spend a lot of time in the kitchen. You could even do all the prep work in advance and have the dinner ready to throw on a sheet pan to pop in the oven when you are ready.
Sheet pan dinners can turn an average sheet pan into a secret weapon in the kitchen and I hope with this recipe, you will not be afraid to use your new secret weapon.

Sheet Pan Cajun Dinner
Ingredients
- 1 pound raw large shrimp peeled and deveined
- 1 ยฝ pounds andouille sausage sliced into 1-inch slices
- 1 pound bag Baby Dutch Yellow Potatoes
- 1 bunch asparagus trimmed and cut into 2-inch pieces
- 6 pieces frozen mini corn on the cob thawed, cut in half
- 2 tablespoons extra virgin olive oil
- 2 tablespoons unsalted butter
- 3-4 cloves garlic minced
- 1 lemon ยฝ for juice + ยฝ sliced, for serving
- 1 tablespoon Cajun seasoning
- Kosher salt and freshly cracked black pepper to taste
- fresh parsley for garnish
Instructions
