Spicy Sloppy Mushroom Sliders {A Meatless Monday Recipe

Spicy sloppy mushroom sliders are a healthy vegetarian take on Sloppy Joes, leaving out the ground beef and replacing it with healthy mushrooms. Making these mushroom sliders spicy, hearty and healthy!

I was presented with a challenge from Meatless Monday and The Mushroom Council called the “Mushroom Makeover Challenge”. The task was to take a family favorite recipe and make it healthier by making it over with mushrooms. This recipe is adapted from my normal Sloppy Joe recipe.

How To Make Spicy Sloppy Mushroom Sliders:

Heat oil in a large nonstick skillet over medium-high heat. Add garlic to the oil and heat until fragrant (Do NOT brown) about 30 seconds. Add in onion and red bell pepper to the skillet and sauté until the onions and bell pepper are tender; about 5 to 8 minutes.

Add the jalapenos, and tomato paste. Cook 2 to 3 minutes more, stirring occasionally allowing the paste to brown in the bottom of the pan.

Add the mushrooms to the skillet and allow them to cook about 2 to 3 minutes.

Stir in the rest of the ingredients, reduce heat to low, and simmer for 20 to 30 minutes.

Meanwhile, warm rolls in the oven for about 5 to 10 minutes, then slice open and spoon the spicy sloppy mushroom mixture on to each bun and serve.

In conclusion, the meatless version of the recipe tastes almost exactly the same as it does with ground beef. The only difference is that mushroom version is a little spicier than normal. I believe that this is because the beef masks some of the heat in the original recipe.

Although this recipe did not win the challenge, I am pleased how it turned out and I will have to make it again for Meatless Monday. This challenge was fun and I appreciate the opportunity to have participated. I look forward to seeing what the other food bloggers came up with for the challenge. I’m sure they will inspire me to do more recipe makeovers.

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 4 cloves garlic minced
  • 1 medium onion diced
  • 1 red bell pepper diced
  • 1 ½ tablespoons pickled jalapenos diced
  • 2 tablespoons tomato paste
  • 1 pound Portobello mushrooms chopped (Half finely chopped and half coarsely chopped)
  • 2 teaspoons pickled jalapeno juice
  • 15 ounces canned tomato sauce
  • 1 tablespoon red wine vinegar
  • 1 tablespoon molasses
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon mustard powder
  • 1 tablespoon prepared mustard
  • Kosher Salt and fresh cracked black pepper to taste
  • Slider Rolls

Instructions
