½lemonjuiced
2tablespoonsfresh parsley leavesroughly chopped + more for garnish
2clovesgarlicpeeled
Kosher salt and freshly cracked black pepperto taste
¼teaspoonsesame oil
1teaspoonground cumin
¼cupwater
smoked paprikafor garnish
pita bread or chips for dipping
Instructions
In a food processor or blender combine all the ingredients except for garnishes. Blend on low-speed until smooth.
Scrape the hummus into a serving bowl.
To serve, sprinkle with paprika, drizzle lightly with olive oil, and top with parsley.
Notes
Stop the processor or blender to push down the ingredients as needed. If the mixture is too dry add a little more olive oil or water to help loosen it up. You can make the hummus up to a couple of hours before you serve it. Cover the top with plastic wrap and leave it at room temperature.
