Baked Mango Salsa Chicken: Chicken breasts coated in Mexican spices, baked with cheese topped with an exotic, chunky, sweet, spicy salsa, on a bed of rice.
Sprinkle both sides of the chicken breasts with the seasoning mix. Coat generously.
Place the seasoned chicken breasts in a large oven-safe saute pan. Sear the first side two to three minutes. Flip the breasts over, then place the pan the preheated oven. Bake until chicken is done and clear juices run; about 30 minutes.
When the chicken is done, remove from the oven and turn on the broiler. Add one slice or sprinkle each breast with pepper jack cheese. Place under the broiler until the cheese is lightly browned and bubbling.
Turn off the broiler. Remove chicken breast from the oven. Pour the mango salsa over the chicken. Use a spoon to help cover the chicken breasts completely. Return the chicken to the hot oven for 15 more minutes or until the salsa is warmed through.
Serve the chicken with salsa on top of a bed of Mexican Rice. Top with sour cream, pickled jalapenos, fresh cilantro and spritz with fresh lime juice.
Notes
You will not use all of the seasoning mix. Store it in an airtight container and reserve it for another time.
