Homemade Tiramisu is a cake with layers of coffee-flavored ladyfingers divided by a fluffy custard of Mascarpone cheese, topped with chocolate and cocoa.
1ouncesquare semi-sweet chocolate or dark chocolate candy bargrated or curls for garnish
Instructions
Take the Mascarpone out of the fridge and let it come up to room temperature while making the custard mixture.
Combine egg yolks and sugar in the top of a double boiler, over boiling water. Reduce heat to low, and cook for about 10 minutes. Stir constantly.
Remove the yolk mixture from the heat and pour into a mixing bowl. Whip until thick and lighter in color. *
Add Mascarpone to the whipped yolks and beat until combined.
In a separate bowl, whip whipping cream until stiff peaks form.
Gently fold the whipped cream into the custard mixture and set aside.
Assemble The Tiramisu:
Split the ladyfingers in half (if needed), and line the bottom and sides of a springform pan or large glass bowl. Brush with coffee liqueur, but do not over saturate them.(If using a springform pan, do NOT put any of the coffee liqueur on the outside ladyfingers.)
Once the first layer of ladyfingers are down, spoon ⅓ of the cream filling over the ladyfingers and smooth it out into as evenly as possible, using the back of a spoon.Dunk the ladyfingers into the bowl filled with coffee liqueur, quickly turning to coat both sides. Place the next layer of ladyfingers onto the custard layer, staggering the gaps. You may need to tear some apart to make them fit into the shape of the dish or pan. Cover the second layer of ladyfingers with custard and smooth out. Cover with another layer of coffee liqueur dipped ladyfingers. Then top with the remaining custard mixture and smooth out.
Garnish with cocoa powder and chocolate curls. Refrigerate several hours or overnight.
Notes
*Sometimes the proteins in the eggs solidify with the sugar. Use a sieve to strain those out before whipping the egg yolk mixture.To make the chocolate curls, use a vegetable peeler and run it down the edge of the chocolate bar. The chocolate needs to be fresh. My chocolate was still within the date marked on the package, but it was a little too dry to make curls. Recipe adapted from AllRecipes.com
