Spanish-Style White Bean Soup With Kale and Chorizo
Spanish-Style White Bean Soup With Kale and Chorizo is gutsy, flavorful, and so good! Made with white beans, peppers, chorizo, and kale in a saffron broth.
.75poundSpanish chorizo sausages3 to 4 links, cut into ½-inch pieces
1onionlarge, finely chopped
4garlic clovesminced
1red bell pepperlarge, finely diced
Kosher salt and freshly cracked black pepperto taste
1tablespoonsmoked paprika
¾poundkaletough stems removed, washed well, and coarsely chopped
Red Wine vinegarfor serving, optional
Instructions
The Crock-Pot Version
The night before you want to make the soup, rinse and pick over beans. Pour in a bowl and fill with water, until water is about two inches over the beans. Soak overnight or 6 to 8 hours.
The next morning, drain and rinse the beans. Place the beans in a crock pot. Pour in chicken stock. Add the bay leaf and a pinch of salt. Set the crockpot to cook 4 to 6 hours on low heat.
The Soup
When beans are done, ladle out ½ cup chicken stock from the beans and soak the saffron.
Meanwhile, heat the oil in a large dutch oven or skillet over medium-high heat. Add the chorizo and cook until browned. Once the sausages are browned, drain excess grease if needed.
Leave some of the oil and add onions, into the same pot. Cook, stirring often, until lightly browned, about 5 minutes.
Add the garlic and cook 1 minute longer. Then add peppers and paprika. Cook for 2 minutes longer.
Carefully ladle beans and cooking liquid out of the crock pot and into the dutch oven.
Stir in the saffron with the soaking liquid and bay leaf to the pot.
Bring to a low boil and then simmer for about 20 to 30 minutes.
Add in the kale and bring back to a simmer and cook just until the kale is wilted, about 5 minutes.
Season with salt and pepper, to taste.
Serve hot in soup bowls and add red wine vinegar, to taste.
Notes
The crock-pot cooking time is longer, but there is no standing over the stove. You can simply boil the beans for 2 hours or until tender.Recipe adapted from Sara Moulten
