Instructions
Preheat the oven to 350 Degrees F. Line a sheet pan with foil or parchment.
Brown the breakfast sausage over medium heat until fully cooked, crumbling into uniform pieces as the sausage cooks. Drain the sausage in a sieve or on a paper-towel-lined plate and allow it to cool slightly.
Wipe the grease from the skillet with a paper towel and return it to the stove.
Melt the butter over medium heat. Crack the eggs and whisk them together in a medium-sized bowl. Pour the eggs into the skillet and stir constantly. Cook the eggs until scrambled and cooked. Remove the eggs from the skillet and allow them to cool slightly on a plate.
Assemble the Sliders: Keep the rolls attached, and cut the sheet horizontally in half through the middle to create a block of bottom buns and a block of bun tops. Next, layer the meat, and eggs, followed by a shredded cheese layer. Make sure all the layers are out evenly across the bottoms, then put on the tops.
Layer the bottoms of the rolls with the meat, a layer of eggs, followed by a layer of cheese. Place the sheet of tops over the layered bottoms.
Place the sheet pan into the oven and back for 8-10 minutes.
Meanwhile, warm the honey, butter, and cayenne pepper (if using) in the microwave until the butter is melted, about 35-45 seconds. Remove and stir in the poppy seeds. Mix well.
After 8-10 minutes, remove the sliders from the oven and brush generously with the honey-butter mixture. Return the slider to the oven and continue to bake until the tops are golden brown and lightly toasted and the cheese is melted has melted. About 5-7 more minutes. Remove from the oven and brush one more time with honey butter. Then sprinkle with poppy seeds if desired.
Slice into individual sliders. Serve warm or at room temperature.
Notes
Use any leftover meats and cheeses you have on hand.
Make sure sliced meats and cheese are sliced relatively thin so they are easier to cut and bite. If you have thick slices of meat, it’s best to chop it up.
Carefully remove the sliders from the sheet pan in one piece. For best results, cut them apart using a serrated knife, preferably a bread knife.
Make Ahead: Assemble the sliders ahead of time, and store them in the refrigerator for up to days. Ensure you prepare the ingredients and allow them to cool completely before assembling the sandwiches. It’s also best to wait and brush the tops with honey butter while baking, so hold off on making it.
Storage: store leftover sliders in an airtight container in the fridge for up to 3 days.
To Reheat: you can quickly warm the sliders in the microwave for 20-30 seconds. However, they can get a little soggy. For best results, rewarm in a 350-degree F oven for 10-15 minutes.
