Breakfast sliders are layered with breakfast sausage, honey ham, scrambled eggs, and cheese brushed with honey butter. They are perfect for a quick breakfast on the go or for serving overnight guests for brunch.

I made these easy, breakfast sliders for the first time when some family came up to visit this summer. We had plans to go canoeing and fishing on the Shenandoah River, so I wanted a quick and easy breakfast that would fill everyone up but not take a lot of time to make. That’s when I came up with this recipe.

Everyone scarfed them up, and this quickly became a breakfast favorite.

What are sliders?

A slider is an American term for any type of small sandwich served as an appetizer or as a snack on game day. However, originally sliders were referred to as miniature hamburgers.

Sliders originated in the 40s when U.S. Navy sailors called mini-burgers “sliders” because they were extremely greasy. Typically a slider is about a 2-3 inch rectangle, and in just one or two bites, the burger would slide right down!

Ingredients and Substitutions

Make the sliders your own by swapping out the bread, meat, and cheese with your favorite ingredients or from what you have on hand. Breakfast sliders are a great way to use holiday ham or anything leftover from the previous night.

For this recipe, I made half sausage, egg, and cheese sliders and half honey ham, egg, and cheese sliders. Detailed measurements can be found in the recipe at the end of this post.

Bread: For this recipe, you’ll need one package of (12) Hawaiian Rolls. However, you could use any leftover dinner roll, biscuits, bagels, or croissants, all great options!

Meat: You will need about 1 pound of cooked meat. For this recipe, I divided the sliders in half. On one half, I added cooked and crumbled breakfast sausage. On the other half, I used deli-sliced honey ham. Use one or the other if you prefer, but you’ll need 1 pound total of cooked meat.
Other options include smoked bacon, Canadian bacon, chopped steak, or leftover holiday ham.

Butter: unsalted butter makes the eggs soft and creamy.

Eggs: you’ll need at least 6-8 scrambled eggs to cover the entire sheet of rolls.

Cheese: the cheese is the binder that holds the sandwich ingredients all together. We love extra-sharp cheddar cheese for almost everything. The brand I buy does not come in slices, so I shred it myself. You can use a type of cheese you want shredded or sliced. Kick these breakfast sandwiches up by using pepper jack cheese!

Honey Butter Mixture: I brush the tops of the rolls with equal parts honey and melted butter. You can substitute the honey with maple syrup if needed.

Add-Ins: I like to sprinkle poppy seeds on top and add a little bit of cayenne pepper into the honey butter mixture for texture and warmth to each bite. These ingredients are optional but highly recommended! Other additions for more savoriness include garlic powder, onion powder, chopped onions or chives, or fresh or dried herbs.

How to Make Breakfast Sliders

The sliders come together fast when all the ingredients are ready to go. Deli ham is probably the easiest to put together because it involves less cooking time. Detailed instructions are in the recipe card at the end of this post.

Brown the Sausage: the sausage takes the longest to cook, so you cook it first — Crumbled sausage takes less time and, in my opinion, has a better mouth feel than sausage patties.

Scramble the Eggs: scramble the eggs however you normally would. I usually add the eggs to the skillet and stir to scramble without whisking. It’s just scrambled eggs, so make them as you want them.

Assemble the Sliders: Keep the rolls attached, and cut the sheet horizontally in half through the middle to create a block of bottom buns and a block of bun tops. Next, layer the meat, and eggs, followed by a shredded cheese layer. Make sure all the layers are out evenly across the bottoms, then put on the tops.

Bake: Place the pan of sliders in the oven and bake at 350 degrees F for 15-20 minutes.

I recommend sprinkling the poppy seeds on top of the sliders just after brushing of honey butter so they won’t get caught up in your brush.

Brush With Honey Butter: halfway through baking, use a pastry brush the sliders with the honey-butter mixture and then again at the end of baking. Sprinkle with poppy seeds if desired.

Serve: slice and serve the sliders warm or at room temperature.

Recipe Tips

  • Use any leftover meats and cheeses you have on hand.
  • Make sure sliced meats and cheese are sliced relatively thin so they are easier to cut and bite. If you have thick slices of meat, it’s best to chop it up.
  • Carefully remove the sliders from the sheet pan in one piece. For best results, cut them apart using a serrated knife, preferably a bread knife.
  • I recommend sprinkling the poppy seeds on top of the sliders just after brushing of honey butter so they won’t get caught up in your brush.
  • Make Ahead: Assemble the sliders ahead of time, and store them in the refrigerator for up to days. Ensure you prepare the ingredients and allow them to cool completely before assembling the sandwiches. It’s also best to wait and brush the tops with honey butter while baking, so hold off on making it.
  • Storage: store leftover sliders in an airtight container in the fridge for up to 3 days. 
  • To Reheat: you can quickly warm the sliders in the microwave for 20-30 seconds. However, they can get a little soggy. For best results, rewarm in a 350-degree F oven for 10-15 minutes.

How do you keep sliders from getting soggy?

Keep them away from condensation. Allow them to cool completely before storing them in the refrigerator (at least an hour). Bake to reheat rather than microwave them.

What condiments can you put on breakfast sandwiches?

Extra honey butter, dijon mustard, Dijon mustard, hollandaise sauce, aioli, or hot sauce.

Ingredients

  • 12 Hawaiian Rolls (1 package), biscuits, or bagels
  • ½ pound ground pork sausage Double to 1 pound if using sausage only
  • ½ pound deli honey ham thinly sliced. Double to 1 pound if using ham only
  • 2 tablespoons butter or spray with cooking spray
  • 8 eggs
  • 1 cup cheddar cheese shredded
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons butter
  • ½ teaspoon poppy seeds (optional)
  • ⅛ teaspoon cayenne pepper (optional)

Instructions

  • Preheat the oven to 350 Degrees F. Line a sheet pan with foil or parchment.
  • Brown the breakfast sausage over medium heat until fully cooked, crumbling into uniform pieces as the sausage cooks. Drain the sausage in a sieve or on a paper-towel-lined plate and allow it to cool slightly.
  • Wipe the grease from the skillet with a paper towel and return it to the stove.
  • Melt the butter over medium heat. Crack the eggs and whisk them together in a medium-sized bowl. Pour the eggs into the skillet and stir constantly. Cook the eggs until scrambled and cooked. Remove the eggs from the skillet and allow them to cool slightly on a plate.
  • Assemble the Sliders: Keep the rolls attached, and cut the sheet horizontally in half through the middle to create a block of bottom buns and a block of bun tops. Next, layer the meat, and eggs, followed by a shredded cheese layer. Make sure all the layers are out evenly across the bottoms, then put on the tops.
  • Layer the bottoms of the rolls with the meat, a layer of eggs, followed by a layer of cheese. Place the sheet of tops over the layered bottoms.
  • Place the sheet pan into the oven and back for 8-10 minutes.
  • Meanwhile, warm the honey, butter, and cayenne pepper (if using) in the microwave until the butter is melted, about 35-45 seconds. Remove and stir in the poppy seeds. Mix well.
  • After 8-10 minutes, remove the sliders from the oven and brush generously with the honey-butter mixture. Return the slider to the oven and continue to bake until the tops are golden brown and lightly toasted and the cheese is melted has melted. About 5-7 more minutes. Remove from the oven and brush one more time with honey butter. Then sprinkle with poppy seeds if desired.
  • Slice into individual sliders. Serve warm or at room temperature.
