Mountain Birthday Memories: Helping “Chicago” Celebrate His Birthday

This weekend was spent helping “Chicago” celebrate his birthday. “Chicago” (AKA: William / Billy/ Stubby/….) is David’s cousin from North Carolina. He and his wife and one of their son’s, came up for a weekend long visit, because he wanted to spend his birthday in the mountains. 

David and I love house guests, so we did our best to show them our best mountain hospitality.

On Saturday, we drove them from the north entrance in Front Royal down Skyline Drive to Luray, Virginia, where we visited Luray Caverns. Luray Caverns is an underground cave system of enormous chambers filled with towering stone columns, cathedral-sized rooms, stone formations, and natural wonders at every turn. It’s truly amazing! David and I have been twice. Well, this was my 3rd time. I don’t remember going as a young child, so technically that doesn’t count.

On Saturday night, we celebrated Chicago’s birthday with a Pineapple Bundt Cake With Pineapple Glaze.

David picked out the recipe and I baked it while David grilled BBQ chicken and cabbage for supper. I also made homemade adult macaroni and cheese for supper on Saturday night, which is always a favorite on the table.

We even put candles on it and sang Happy Birthday after a couple of hours of digesting our really good supper.

Sunday morning, I made stuffed croissant french toast with blueberry cream cheese complete with whipping cream, maple syrup and a dusting of powdered sugar. David fried country sausage to accompany it.

No fall mountain trip is complete until you have visited our favorite pumpkin patch. We took a ride down the mountain road to our favorite pumpkin patch and sent Chicago and family home with pumpkins, gourds and apples.

It was a great weekend! Family is important and always welcome in our home.

I sure hope we can get together again soon!
