Smoky, spicy Chipotle BBQ Cheese Sauce can elevate fries, burgers, nachos, and anything you put it on. This easy recipe blends cheddar, chipotle, and BBQ tang. Dip, drizzle, devour!

Have you ever thought to yourself, “I love a good cheese sauce, but what if it had a little kick and a whole lot of smoky-sweet BBQ flavor?” then we have the cheese sauce you’ve been dreaming about. This Chipotle BBQ Cheese Sauce is creamy, tangy, and smoky, with just the right amount of heat. It’s the kind of sauce that makes you want to dip, drizzle, and dunk everything in sight: fries, nachos, burgers, heck, even a spoon (we won’t judge).

This recipe was born from my desire to blend the zesty tang of barbecue sauce with a smooth, creamy cheese sauce. To add depth, I incorporated chipotle peppers, which contribute a smoky flavor and pleasant heat. 

It’s baffling how this recipe, of all things, vanished, buried deep within my notes like it was never meant to be seen again. I still can’t figure it out, but I’m so glad I found it, and I can now share it with you!

What Makes This Sauce So Good? 

This sauce has the perfect balance of sweetness and heat. The magic starts with the Chipotle BBQ Sauce Base, a beautifully balanced mix of ketchup, mustard, apple cider vinegar, and a touch of sugar that gives it that signature BBQ tang. Then, I add chipotle pepper and a bit of adobo sauce for a smoky heat that lingers just enough to keep things interesting. A splash of Worcestershire ties it all together, adding depth and a little umami magic.

What’s In Chipotle BBQ Cheese Sauce?

Every ingredient in this sauce plays an important role in delivering that perfect balance of heat, tang, and creaminess. Here’s what you’ll need:

Ketchup and Mustard: The classic BBQ sauce combo that brings sweetness and tang. You can substitute the classic mustard with mustard powder for a more robust flavor. 

Sugar and Apple Cider Vinegar: The sweet and sour duo that gives BBQ sauce its signature zing. Substitute brown sugar for the white sugar for a rich molasses flavor.

Worcestershire Sauce: Adds depth and umami richness.

Chipotle Pepper and Adobo Sauce: This smoky, spicy element sets this sauce apart from other cheese sauces.

Salt and Black Pepper: Essential seasonings that enhance all the other flavors.

Butter and Flour: The base for a smooth and creamy roux.

Half-n-Half: liquifies the sauce with a rich and velvety texture.

Cheese Sauce 101: How to Make Chipotle BBQ Cheese Sauce

A good cheese sauce always begins with a roux, a classic combination of butter and flour to thicken things up, while the half-n-half brings the creaminess. Then comes the star of the show: extra-sharp cheddar cheese. Whenever you make cheese sauce, you need that deep, bold cheddar flavor.

1. Make the BBQ Base: In a saucepan, stir everything together (ketchup, mustard, sugar, vinegar, Worcestershire, chipotle, adobo sauce, salt, and pepper) over medium heat. Let it warm until the sugar melts and the flavors meld, but don’t let it boil. 

2. Build the Roux: Melt some butter in a pan and whisk in the flour. Cook it for a few minutes, stirring constantly so it doesn’t taste like raw flour. Then, slowly pour in the half-n-half, letting it thicken up nicely.

3. Blend the Flavors: Reduce the heat and stir in the cheese until it’s gooey and melty. Now, bring it all together by pouring in the BBQ sauce base. Keep stirring over low heat until everything is beautifully combined and irresistibly smooth.

  • Taste and adjust sugar/vinegar for desired sweetness/tang.
  • Adjust thickness using a cup of milk instead of half-n-half for a thinner sauce or with heavy cream for a creamier, richer sauce. 
  • Add more heat by adding extra chipotle, chopped jalapenos or your favorite hot sauce.
  • Cover cooling sauce to prevent skin.
  • Store in the fridge and reheat leftovers gently, adding liquid (milk) as needed. Discard after 4-5 days.

Ingredients

BBQ Sauce Base:

  • ½ cup ketchup
  • 2 teaspoons yellow mustard
  • 6 tablespoons white sugar
  • ½ cup apple cider vinegar
  • ¼ cup Worcestershire sauce
  • 1 chipotle pepper diced
  • 1 teaspoon adobo sauce from chipotle peppers
  • 1 teaspoon salt
  • 1 teaspoon black pepper freshly cracked

Cheese Sauce:

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup half-n-half
  • ¾ cup extra-sharp cheddar cheese shredded

Instructions

Make the Chipotle BBQ Sauce Base:

  • In a small saucepan, whisk together the mustard, sugar, ketchup, vinegar, Worcestershire sauce, diced chipotle and adobo sauce, salt, and pepper. Heat until the sugar melts and the ingredients are combined, but do not boil. Remove from the heat and set aside.

Make the Roux:

  • Melt the butter in a medium saucepan over low heat. Sprinkle in the flour. Cook the flour and butter for 2 minutes, constantly stirring with a wooden spoon. Gradually stir in the half-n-half; bring to a low boil. Cook until thickened, stirring constantly, about 2 minutes.

Combine the Cheese Sauce:

  • Reduce the heat, add the cheese, and pour in the BBQ sauce base. Stir over low heat until the cheese is melted and everything is warmed through.

Serve:

  • Remove from the heat and serve immediately.

Notes
