One evening, I wanted to make a quick dessert with what I already had on hand. A sheet of puff pastry in the freezer and a few apples in the fridge. I figured, why not throw something together and see what happens? Well… what happened was delicious!

The first bite took me straight back to childhood. My mama loved the apple pies from McDonald’s. She would order one every time we went. These remind me so much of those little pies she loved so much, only they’re WAY better! They’ve got that warm, cinnamon-spiced apple filling wrapped in a crisp, golden crust that are homemade, fresh, and air-fried to perfection.

If you love apple pie but don’t want to fuss with rolling out crusts or heating up the oven, these little hand pies are your new best friend. They’re easy, quick, and just sweet enough to make any night feel a little cozier.

Ingredients You’ll Need For the Pies

  • Puff Pastry: A sheet puff pastry, thawed: Store-bought puff pastry works great. Make sure it’s thawed but still cool, that’s how you get those beautiful, flaky layers.
  • Apples: Use firm, slightly tart apples like Granny Smith, Braeburn, or Honeycrisp for the perfect balance of sweet and tart. (I used Braeburn)
  • Sugar: a combination of brown sugar and white sugar: A mix of both adds depth and sweetness. The brown sugar gives caramel notes while white sugar keeps the filling light.
  • Cinnamon: Ground cinnamon: The heart of any apple dessert. Use Vietnamese Cinnamon for the best flavor.
  • Nutmeg Cloves: Optional, but they add a warm, cozy spice that makes your kitchen smell amazing.
  • Vanilla Extract: Adds a smooth, comforting finish to the filling.
  • Water: a little water helps the apples cook evenly and prevents scorching in the pot.

For the Coating

  • Sugar + Cinnamon: Classic cinnamon-sugar combo for that irresistible crispy coating.
  • Melted Butter: Helps the coating stick and makes the pies golden brown.

Optional Add-Ins

  • Fruit Filling: Swap apples for cherry, blueberry, pears or peaches for a fun seasonal twist.
  • Add caramel, raisins, or chopped pecans to the filling for extra flavor and texture.
  • Try homemade pie crust or crescent roll dough instead of puff pastry if that’s what you have on hand. Just add slits to the top of the pies to allow the steam to escape.

How To Make Air Fryer Apple Hand Pies

  1. Cook the apples with sugar and spices until soft and fragrant, then let them cool.
  2. Spoon the filling onto puff pastry squares and fold dough into little parcels. Use the tines of a fork to crimp the edges for a tight seal. 
  3. Brush with butter, sprinkle with cinnamon sugar, and give them a little chill.
  4. Air fry until golden and flaky. Cool for 10 minutes on a wire rack, then dig in while warm!

Heating & Storage

These little pies are just as good the next day only if they last that long!

To Store:

  • Keep cooled hand pies in an airtight container at room temperature for up to 2 days, or refrigerate for up to 4 days.
  • You can freeze unbaked hand pies wrapped in wax paper inside an air-tight freezer container, too! Just assemble them, skip the coating, and freeze. When ready to bake, brush with butter, add the cinnamon-sugar coating, and air fry straight from frozen, just add 2-3 extra minutes to the cooking time. They can be frozen for up to 3 months.
  • I do not recommend freezing baked pies. The texture will not be good when defrosted and warmed up.

To Reheat:

  • Air fryer (best method): 350 degrees F for 2-3 minutes, until crisp and warm.
  • Oven: 350 degrees F for 5-7 minutes.
  • Microwave: 15-20 seconds if you’re in a hurry (though they’ll lose some crispness and become a little soggy).

Tips For Making Air Fryer Apple Hand Pies

  • Use cooking spray to grease the air fryer so that the puff pastry doesn’t stick.
  • Cool the apple pie filling completely before assembling to prevent soggy pastry.
  • Don’t overcrowd the air fryer basket. Work in batches for best results.
  • Use parchment liners to line the basket of an air fryer to make cleanup easy.
  • Serve warm with vanilla ice cream, caramel drizzle, or a hot mug of coffee.

What started as a spur-of-the-moment experiment turned into one of my favorite quick desserts. These air fryer hand pies are proof that sometimes the simplest ideas lead to the sweetest results.

Every time I make them, I think of Mama and her love for those McDonald’s apple pies. I should make her some and take them on my next visit.

Air Fryer Apple Hand Pies

Ingredients

Puff Pastry

  • 1 sheet puff pastry thawed

Apple Filling

  • 4 apples (Braeburn or Granny Smith work great)
  • 2 tablespoons water
  • 2 tablespoons brown sugar
  • 2 tablespoons white sugar
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • ⅛ teaspoon ground cloves
  • ¼ teaspoon vanilla extract

Cinnamon Sugar Coating

  • 3 tablespoons white sugar
  • 1 tablespoon ground cinnamon

Instructions

Thaw the Puff Pastry

  • Follow the package directions to thaw your puff pastry. It should be soft enough to roll but still cool to the touch.

Make the Apple Filling

  • Peel, core, and dice the apples into small pieces.
  • In a medium saucepan over medium-low heat, combine the apples, water, brown sugar, white sugar, cinnamon, nutmeg, and cloves.
  • Cook, stirring occasionally, for about 30 minutes, or until the apples are tender and the mixture is thick like porridge with very little liquid remaining.
  • Remove from the heat, stir in the vanilla extract, and transfer the filling to a bowl to cool for at least 15 minutes.

Assemble the Hand Pies

  • On a lightly floured surface, roll out the thawed puff pastry into a rectangle about 10×11 inches.
  • Cut the pastry into 6 equal pieces. (Make three vertical cuts and three horizontal cuts for even rectangles.)
  • Spoon a small amount of the cooled apple filling onto one half of each pastry piece, leaving a 1-inch border around the edges.
  • Fold the dough over the filling, stretching it gently to cover. Press the edges together and crimp with a fork to seal.

Coat the Pies

  • In a small bowl, mix together the cinnamon and sugar for the coating.
  • Brush each hand pie with melted butter, then sprinkle or dip both sides in the cinnamon sugar mixture until fully coated.
  • Place the pies on a platter or baking sheet and refrigerate for 5 minutes while you preheat the air fryer.

Air Fry the Hand Pies

  • Preheat your air fryer to 390°F.
  • Arrange the pies in a single layer in the air fryer basket (work in batches if needed).
  • Air fry for 8-10 minutes, or until the puff pastry is golden brown and crisp.
  • Let the pies cool for about 10 minutes before serving – the filling will be hot!

Notes

  • Don’t skip cooling the filling because warm filling can make the pastry soggy.
  • Try adding a drizzle of caramel or a dusting of powdered sugar before serving for an extra treat.
  • These hand pies are delicious warm or at room temperature.
