I found this recipe for healthy French onion soup over at Vegetarian Times. I have always wanted to try the full-blown version of french onion soup but decided this vegetarian recipe would be a good Meatless Monday post because this version of the soup is a lot healthier and has less fat. A major plus!

Traditional French onion soups can contain fat as much as 39 grams per serving. This healthy french onion soup recipe has just about 10 grams of fat per serving and tastes pretty darn good too.

This healthier take on the classic French Onion has only about 10 grams of fat per serving and tastes pretty darn good too. healthy French onion soup can capture the very essence of Paris, without any guilt.

Preheat the broiler. Ladle soup into oven-safe bowls.

NOTE: *If you do not have an oven-safe individual baking dish, then you can toast the bread with cheese on a baking sheet. Once the cheese is melted, place it in the bowl with the soup.

My advice?

Don’t you dare rush the onions!! Believe me, it takes a while to brown them on such a low heat, but it will be worth the time and you will not be disappointed. Slices of toasted bread, with just enough melted cheese complete this dish.

This healthy French onion soup was a great soup for a cold winter night. I only wished I had more bread to go along with the soup, but didn’t need the carbs anyway.
