The wooden spoon test is the best way to test oil before frying up chicken, pork chops or french fries. Especially is you don’t ah a clip-on thermometer to tell what temperature you frying oil is.
To check the oil, carefully insert the handle of a wooden spoon into the oil. The oil will bubble rapidly around the spoon end when it’s ready for frying. If the oil bubbles very vigorously, then the oil is too hot and needs to cool off a touch. If no or very few bubbles pop up – then it’s not hot enough.
This will keep your favorite fried dishes from becoming too oily and soggy.
