Applesauce Muffins With Cinnamon Crumb Topping

I just love the way the whole kitchen becomes warm and cozy whenever I make applesauce muffins. The tender muffins are soft and moist, loaded with warm cinnamon apple flavor. A sure sign that fall has come to your kitchen.

The recipe for these applesauce muffins is easy to make and comes together quickly using simple pantry ingredients like Bisquick, and applesauce, then topped with a cinnamon crumb topping.

The muffins make a great snack or are perfect for breakfast on the go. I first made these applesauce muffins years ago when my best friend and her husband came to visit for the weekend. Our husbands planned an early morning fishing trip, so I thought the muffins would be perfect to take with them on their trip. They could grab them with coffee and head to the water to fish, while my best friend and I slept in a little.

I’ll be honest, the applesauce muffins were very dry, so I have made some adjustments to the original recipe. The muffins are now delightfully moist. And they have fewer calories because I omitted the cooking oil completely by adding in a little more applesauce.

Let me show you how I made them. Let’s make applesauce muffins!

Ingredients for Applesauce Muffins

Muffin Dry Ingredients

  1. Bisquick Baking Mix – Bisquick gives the muffin almost a light and fluffy biscuit-like texture. If you don’t have Bisquick in your pantry, you can use the following conversion using common baking ingredients:
    •  1 cup all-purpose flour, 1 ½ teaspoon, baking powder, ¼ teaspoon salt, 1 tablespoon shortening, vegetable oil, or melted butter = 1 cup of Bisquick.
  2. Granulated Sugar
  3. Ground Cinnamon – do yourself a favor and order some Vietnamese Cinnamon (also known as Saigon cinnamon). This cinnamon comes from the inner bark of evergreen trees native to Saigon. This cinnamon is a lot more aromatic and flavorful than regular cinnamon. You can order some HERE.

Muffin Wet Ingredients

One thing I love about this recipe is that there is no oil in it. All the moisture comes from the following

  1. Applesauce – the star ingredient of these muffins. If you don’t have time to make some yourself. Use chunky applesauce so there will be small bits of apple throughout every bite of your muffins.
    I recommend White House Chunky Applesauce because it’s local and I grew up on it.
  2. Whole Milk – You could substitute with non-dairy nut milk if desired.
  3. Eggs – large fresh eggs.

Cinnamon Crumb Topping

  1. Granulated Sugar
  2. Brown Sugar – light brown and firmly packed.
  3. All-Purpose Flour
  4. Ground Cinnamon
  5. Unsalted Butter – melted.

How To Make Applesauce Muffins With Cinnamon Crumb Topping

  1. Combine dry ingredients (baking mix, sugar, and cinnamon) in a large bowl with a whisk; then make a well in the center of the mixture.
  2. Whisk together wet ingredients (applesauce, milk, and eggs) in a small bowl; add to dry ingredients to the wet ingredients, stirring just until the dry ingredients are moistened.
  3. Scoop the batter into a lightly greased 12-cup muffin tin, filling each muffin cup just about full.
  4. Whisk and stir the cinnamon crumb topping. Start by whisking together the sugars, all-purpose flour, and cinnamon until blended. Then stir the melted butter until well blended, and crumbly. Sprinkle over batter. 
  5. Bake for 18 to 20 minutes or until a wooden pick inserted in the center comes out clean. The tops should be golden brown.
  6. Cool the muffins in the pan on a wire rack for 5 minutes, then remove the muffins from pan to a wire rack.
  7. Enjoy applesauce muffins with a cup of coffee or tea or a tall glass of milk.

Applesauce Muffins

Moist applesauce muffins filled with chunky applesauce and topped with a cinnamon crumb topping. They will make your kitchen smell like fall!

Ingredients

The Muffins

  • 3 cups Bisquick Baking Mix
  • ½ cup granulated sugar
  • 2 teaspoons ground cinnamon (Vietnamese is best!)
  • 1 ¼ cups applesauce chunky
  • ½ cup whole milk
  • 2 large eggs

The Cinnamon Crumb Topping

  • ⅓ cup granulated sugar
  • ¼ cup light brown sugar firmly packed
  • 3 tablespoons all-purpose flour
  • ¼ teaspoon ground cinnamon
  • 2 tablespoons unsalted butter melted

Instructions

  • Preheat oven to 400 degrees F.
  • Combine dry ingredients (baking mix, sugar, and cinnamon) in a large bowl with a whisk; then make a well in the center of mixture.
  • Whisk together wet ingredients (applesauce, milk, oil, and eggs) in a small bowl; add to dry ingredients to the wet ingredients, stirring just until the dry ingredients are moistened. Scoop the batter into a lightly greased 12-cup muffin tin, filling each muffin cup almost full.
  • For the cinnamon crumb topping: whisk together the sugars, flour, and cinnamon until blended. Then stir the melted butter into sugar mixture until well blended and crumbly. Sprinkle over batter.
  • Bake for 18 to 20 minutes or until a wooden pick inserted in center comes out clean. The tops should be golden brown.
  • Cool the muffins in the pan on a wire rack for 5 minutes, then remove the muffins from pan to a wire rack.

    Line under pan with foil for drips. These are yummy. I’ll add more applesauce next time to make them a little more moist.
