Turn Mexican night leftovers into a delicious and flavorful breakfast with a Mexican Breakfast Pizza! It’s a quick breakfast when life seems stuck on fast forward.
They say that life gets faster the older you get. Unfortunately, life is stuck in fast forward, and it feels like everything is a blur. Like everyone else, I wish I had a pause button. The summer is half over, and I have yet to go canoeing with David. Hopefully, we can get some river time in when we are on “Staycation” in a couple of weeks. If I had a pause button, I’d mash the crap out of the button during that week.
Now keep in mind, I realize that not everyone has guacamole just sitting around in the fridge. So if you don’t have leftovers from Mexican night at home, you could make it ahead of time, and you’re all set to make these pizzas.
Ingredients Needed:
- Grease: I used unsalted butter to keep the eggs from sticking, but use any oil or grease you want.
- Eggs: the freshest eggs you can find!
- Seasoning: Kosher salt and freshly cracked black pepper to taste.
- Tortillas: 8-inch flour or corn tortillas can be used for this recipe
- Toppings: fresh guacamole, salsa, and fresh cilantro for garnish.
How To Make Mexican Breakfast Pizza
- First, melt butter in a medium non-stick frying pan. Fry the eggs sunny-side up; season with salt and pepper.
- Prepare the tortilla per package directions or toast over the burner of a gas stove.
- Add ¼ cup of guacamole; spread out over the tortilla, leaving about ½-inch from around the edges uncovered.
- Carefully place the fried egg on top of the guacamole, then add about ¼ cup of the salsa.
- Garnish with fresh cilantro and serve immediately.
