You will not believe how incredibly good this Baked Mango Salsa Chicken is!

One of David’s sister (he has three) gave us some of her homemade (and canned) Mango salsa a while back. I decided I wanted to create a chicken dish using this salsa. To accompany it I made some Mexican Rice that I had tried some time ago. The meal turned out great. Either I need some recommendations on some store-bought mango salsa that would be worth a try or I need to get her recipe. If you have a great Mango Salsa you should give this recipe a try.

The chicken breasts are seasoned with Mexican spices, baked with cheese and topped with an exotic, chunky, sweet and spicy salsa, then served plated on a bed of rice. This Baked Mango Salsa Chicken is a fiesta in your mouth!

Baked Mango Salsa Chicken

Preheat oven for 350 degrees F.

Sprinkle both sides of the chicken breasts with the seasoning mix. Coat generously.

Place the seasoned chicken breasts in a large oven-safe saute pan. Sear the first side two to three minutes. Flip the breasts over, then place the pan the preheated oven. Bake until chicken is done and it runs clear juices; about 30 minutes.

Note: You will not use all of the taco seasoning mix. Store it in an airtight container and reserve it for another time.

When the chicken is ready, remove from the oven and turn on the broiler. Add one slice or sprinkle each breast with pepper jack cheese. Place the pan under the broiler until the cheese is golden brown and bubbling.

Turn off the broiler. Remove chicken breast from the oven. Pour the mango salsa over the chicken. Use a spoon to help cover the chicken breasts completely. Return the chicken to the hot oven for 15 more minutes or until the salsa is warmed through.

Serve the chicken with salsa on top of a bed of Mexican Rice. Top with sour cream, pickled jalapenos, fresh cilantro and spritz with fresh lime juice.

There are many levels of flavor in this baked mango salsa chicken. You get so many sensations all at the same time. It’s kinda like zip-bam-boom-shock-a-lock-a in your mouth. A flavor explosion for sure!
