Snow Day Tomato Soup and Grilled Cheese {A Meatless Monday Post

We woke up to six inches of snow this morning. It snowed all day yesterday, all night last night and into most of today. Finally it seems to have stopped. It is really a good thing that it is Spring time, because if it were the dead of winter all the snow that fell would have stuck and accumulated and we may not want to know exactly how much would be on top of us now.

We were unable to go to work with all the snow, so we spent the day at home doing laundry. This morning David had quite a challenge eating his cereal. His Royal Highness wanted in on the milk. Ashes loves a glass bowl, so he can see how much milk is left. He can see it and knows the exact moment to budge his head into the bowl for the last bit of milk. There’s no going back for seconds when it comes to cereal.

For lunch, I had all the ingredients needed to make some meatless nachos. We had left over chips from the Meatless Monday Bean Chili we had the last week. I added some shredded cheddar, sprinkled the chips with a light dusting of cumin and then popped them into a 350 degree F oven until the cheese was melted. Once the cheese was melted I added some salsa to each chip. Next I added a bit of sour cream, a jalapeno slice and sprinkled the nachos with cilantro. The perfect light Meatless Monday lunch. The spiciness  made looking at the snow fall a little less chilly.

For supper we were originally supposed to have “Eggs in Hell“. Unfortunately, I forgot some essential sauce ingredients and we had to come up with an alternative meal. Why not grilled cheese sandwiches and tomato soup?? Yes, please!

I decided I wanted to use up the rest of the mozzarella from last night’s baked ziti, by adding slices to the cheddar on each sandwich. I opted for some fresh basil on mine as well in my tomato soup along with a sprinkle of parm. I have to say, that grilled cheese may have been the best I have ever made. I believe that I am officially addicted to basil.

Tomorrow we’ll go back to work. There’s nothing like a therapeutic snow day in Spring. Best of all the laundry was done by 5:00 p.m. Ha!

      Thank you! I like your work too. Although I do most of the blogging here, I make sure David reads what is going on. You both have the same passion for grilling.
