I have a lot of history with this homemade Greek salad dressing recipe. It always takes me back to my college days when I was introduced to Spinach Feta pizza.
Besides its amazing flavor, what I love most about this Greek salad dressing recipe is its versatility. You can drizzle over everything from Greek salad to potatoes and even use it as a marinade for chicken.
However, this dressing is not pretty to look at. I struggled a bit trying to make it look pretty in the photos for this post. Despite how ugly this dressing looks, it tastes amazing, and I know you’ll love it.

Greek Dressing Ingredients and Substitutions
This recipe uses simple ingredients that you may already have in your pantry. I’ve summarized them below and provided substitutions.
Dry Ingredients:
Herbs: Dried oregano and dried basil. Oregano is what makes this dressing so Greek. If you don’t have dried basil, double the oregano. When using fresh herbs instead of dried, use 1 part dry to 3 parts fresh.
Spices: Garlic powder and onion powder. If you are a true garlic lover and love the taste of raw garlic, use fresh garlic. If using fresh onion, I recommend finely minced shallots instead.
Seasoning: Freshly cracked black pepper and kosher salt.
Wet Ingredients
Mustard: Use only a small bit of Dijon Mustard to accentuate the flavors. Don’t worry; it doesn’t make the dressing taste like mustard.
Oil: You should splurge and use really good extra virgin olive oil. It will make a huge difference in flavor.
Vinegar: Red wine vinegar really makes this dressing delicious. If you use a different type of vinegar, I’m not sure it would taste like it’s supposed to.
Lemon: Freshly squeezed lemon juice rounds out the dressing. I have long made this dressing with 100% red wine vinegar without any lemon juice. I just changed the recipe recently because I liked it better. David liked it better without lemon juice, so use your best judgment on what flavors you like.

How to Make Homemade Greek Salad Dressing
You don’t need any fancy gadgets to make this dressing. My favorite way to combine the ingredients is to shake them inside a salad dressing shaker or mason jar.

- Add the ingredients to a jar.
- Seal the jar with a lid
- Shake!
Voila!! Homemade Greek Dressing if less than 5 minutes.
Leftovers and Storage
Leftover dressing can be stored sealed in an airtight container in the fridge for up to 2 weeks. When left in the fridge, the components of the dressing will separate and solidify. Before using, let it warm up to room temperature and shake it well. You can also warm it in the microwave for 15-20 seconds to make it easier to combine again.

Tips For Making Homemade Greek Salad Dressing
- Crush dried oregano and basil with a mortar and pestle (or use your fingers)
- To balance tangy dressings, add a touch of sugar or honey.
- For a creamy Greek dressing, mix in some Greek yogurt and adjust the salt to taste.
- Use raw garlic to infuse the dressing for added depth of flavor. Mince the garlic and let it soak in the vinegar and lemon juice for 10 minutes before mixing into the dressing. This will meld the potent taste.
- You can make this ahead and let the flavors meld together. I recommend waiting about an hour before you are ready to serve.
