BEHOLD!! Leftover beef brisket sandwiches! Yum!!
Leftovers are as good as the eye of the beholder. If you know what to do with them, they can be just as good or even better than the time before. Especially if you reinvent them altogether.
We usually make smoked beef brisket enchiladas when we have leftover brisket, but this beef brisket was so good from the day before, that we decided to make some sandwiches for Sunday’s supper. The only thing we had to cook that night were the beautiful snaps (green beans) we had gotten from the farmers’ market, along with some leftover potato salad.
I have to say that this is probably one of the best sandwiches I have ever eaten! The gooey melted cheese is so good blanketing the juicy brisket. The barbecue sauce drips off onto your hands and plate and that crispy baked bread is soft and squishy on the inside. It’s good! I mean, it was so good that it made you want to slap your mama and your grandmamma.
No, I wouldn’t really do that. It’s just an expression.
We took the left over brisket slices and heated them in the frying pan. Then we cut open a hoagie roll and laid it open on a foil lined baking sheet. We then topped the meat with BBQ sauce and some shredded Italian cheeses, leftover from Meatless Monday’s Zucchini Boats.
After the cheese was melted and had turned golden brown we took them out of the oven, placed the to of the hoagie roll on top and sat down to eat. Serve with extra BBQ Sauce for dipping!
